There are four types of King Crab available on the market; Red, Blue, Golden from Bering Sea and Centola from South Pacific.
Red King crab is the most sought out for as it is known for its sweet meat. Blue king crab tends to have extraordinary large right claws. Golden king crab is commonly smaller and more abundant. Centola, also known as Southern king crab, harvested off the pacific coast of South America is a newcomer to the US king crab market but quickly gaining in popularity.
There are also four different species of snow crab; Opilio, Bairdi, Tanner and Centolon. Opilio snow crab is the most common crab on the market caught in both the Atlantic and Pacific Oceans, while Alaska snow crab is caught in the Bering Sea. Another newcomer is Centolon snow crab from Chile. Snow crabs sold in the U.S. market are primarily from Canada, Alaska and Russia.

Alaska king crab is prized for its delicate flavor, tender texture and convenience. It is an excellent source of high-quality protein, while low in fat and calories. The succulent flavor of this delicious crab takes well to a variety of seasonings and other ingredients.
King crab is measured by how many crab legs it would take to make 10 pounds. A size "9-12" would mean there is on an average 9 to 12 legs per 10 pounds. Claws are not counted.
